I hope you are all surviving this season, where cooking can feel like planning a battle! See the hope of these delicious ricotta stuffed squashes like the light of a new dawn.

Please enjoy this simple, but rich and delicious side dish for the Thanksgiving table. It would be amazing to try it with Delicata Squash so you can eat the peel, but I could not find one. Read on for some fun media adventures and an update from embodied cooking class-land!
Roasted Acorn Squash with Ricotta, Hot Honey and Thyme
Serves 4
TL;DR: Quarter the squash, scoop out the seeds and roast them. Fill with ricotta, drizzle with hot honey and sprinkle thyme overtop.
1 acorn squash
1 Tbsp olive oil
1 /2 tsp salt, or to taste
3-4 sprigs thyme (optional)
1 cup ricotta
1 Tbsp honey
1/2 tsp sriracha or other hot sauce
Salt and pepper to taste
Turn the oven to 425 F.
Cut the acorn squash into quarters and remove the seeds and stringy bits with a spoon.
Lay the squash on a baking sheet lined with parchment or a silicone baking sheet. Drizzle with the olive oil and salt then use your hands to evenly coat the squash slices. Sprinkle half the Thyme leaves all over.
Bake for 40-50 minutes or until a fork can easily pierce the flesh all the way to the skin.
Remove the squash from the tray and fill each quarter with 1/4 cup of ricotta.
If the honey is hard, melt it in the microwave for 10 seconds or until it is liquid. Mix the hot sauce in with the honey and drizzle it over the ricotta. Finally sprinkle the top with the remaining Thyme leaves if using.
Enjoy, but do not try to eat the skin, simply remove the flesh and ricotta and eat.

I have done this a few times and the advice just doesn’t change that much. But of course I am always glad to share how we can all eat well and simply center vegetables and find ways to appreciate our own cooking.
I also wanted to share this amazing episode of the Ten Percent Happier Podcast. Father Gregory is a legend and this episode was like nectar for the soul.
So many great quotes but this one stood out to me. When talking about keeping doors open to those who may be causing harm because of their wounds he says “Come back when you’re ready because we think you’re just amazing, and one day they’ll believe it.”
