Salad with Popcorn and Loving Ourselves Best from my 6-year Old
Have you ever tried putting popcorn on your salad? Instead of croutons or noodles we have another kind of crunch experience, and hey it’s naturally gluten-free. This week’s recipe for Charred Summer Salad is from my book, Good and Cheap and we will also be making it in this coming week’s blissful cooking class. Charred Summer Salad
serves 2 or 4 as a side
TL; DR: Chop and broil the zucchini and corn, mix together the dressing and then toss it all together and top with popcorn and more chili powder, salt and pepper.
2 medium zucchini
2 cobs corn
1 Tbsp olive oil or vegetable oil
Salt and pepper
2 oz cotija or feta crumbled
1 cup popcorn
Dressing
1 lime juiced
1 Tbsp olive oil
1/2 tsp chili powder
Salt and pepper
Turn your oven’s broiler to high.
Chop off both ends of the zucchini, then slice each into four long sticks. Shuck the corn. Lay the zucchini and corn on a baking tray, then rub them with oil, making sure they're well coated. Sprinkle with salt and pepper.
Broil (or barbecue) for 2 to 5 minutes, depending on how powerful your broiler is. Turn the corn over to make sure it cooks evenly. The zucchini should start to blacken in some spots. This is good! Broil for another 2 to 5 minutes, until the vegetables are lightly charred.
To make the dressing, mix the lime juice, olive oil, chili powder, salt, and pepper in a large bowl. Taste it and adjust the seasoning, if necessary.
Chop the zucchini into bite-size pieces and slice the corn kernels from the cobs.
Transfer the vegetables into the bowl with the dressing. Add the crumbled cotija or feta and mix well. Sprinkle the popcorn over the top, then dust with a little extra chili powder, salt, and pepper.
Loving Ourselves Best and Most from the mouth of my 6 year old
The other week my daughter Io was playing on our little indoor jungle gym and absolutely floored me with this reflection. She said “everybody loves other people, but they also love themselves best.” She said it like it was pure fact. I speak more about it in the Tiktok below. Class Series with me hosted by the Sacramento Public Library

The Sacramento Public Library is running an amazing program (of which this series is a part) over the summer to provide lunches to kids who might miss out on school lunch during the summer. Additionally they are providing boxes of produce, some cooking lessons, and copies of my book, Good and Cheap to families visiting the library during the summer! These classes supplement and further send the message out into the wider community that cooking is accessible, pleasurable and supportive. Please join us!
