This is another Ottolenghi recipe fore Soba Noodles with Eggplant and Mango that I think you will really enjoy. I am planning to simply pan-fry the eggplant rather than the full shallow-fry that he uses in the recipe. I just don’t like having to use that much oil although it is a wonderful cooking method.
